Today was Chili Sauce day. It's not a favorite day for my family but it's one of those necessary days every year.  Tomorrow is Chili Sauce Day Take 2.  Also not popular.

This morning I dragged my faithful family to the farm down the road to pick roma tomatoes.  We picked 1 bushel... well three of us did, the other one wandered around looking for bugs and avoiding any manual labour.

Said bug hunter redeemed himself by spending an hour chopping onions, peppers, and helping me skin what seemed like a million little red lava bombs.

Here's how to make your own!

Steph's Chili Sauce (adapted from Cindy's!)
6 onions chopped
1/2 bushel tomatoes
3 green peppers chopped
3 red peppers chopped
4 cups vinegar
2 cups white sugar
2 cups brown sugar
8 gloves garlic, smashed
1/4 cup pickling spice

I always blanch my tomatoes and remove the skin.  Then I dump it all into a huge stock pot, bring it to a boil, reduce and simmer until you have about 1/2 left. (a few hours).  Can it in jars.  We eat it all winter with nacho chips, or sometimes it's my base for pasta!  Love it!!

Apples and Lavvu 003
I’m super excited about the apples, but I’m even more excited about the 6 wood crates I picked up at the same time!  Only $2 each and they are in great shape!

Half the apples are going to apple butter, the other half to apple sauce.  And I have a lot of work to do.

Are you doing any canning?  I found some cute free labels online...

No Frills had their onions on sale recently.  The 10 lb bags were $1.49.  I bought 2 bags.  What can I say, I'm a sucker for a good sale and I like to buy things while they are in season.

The problem then presented itself... what I'm I going to do with all these blessed things!

I chopped them.  All of them.  Then I backed them in bags and froze them all.  This was not my first choice but I don't have a pressure cooker so I couldn't can them.

Caramelized onions are my favorite!!  Maybe I will ask for a pressure cooker for Christmas.

I think my husband is happy that's all over.... I guess the fumes were getting to everybody!

I trust everyone got their strawberry picking in.  The berries around here were excellent!  I made strawberry jam and we dehydrated 10 trays this year!

Now I just have to figure out where I'm going to store it all....

I have an Amish cookbook that has the instructions for making apple butter.  One recipe requires 40 bushels of apples, begins at 5:30am and is ready to can at 8pm.  Mother of McIntosh!  Anyway, I found this great recipe online for apple butter that you make in your slow cooker.  I’m sure some of you already know this method but it was a revelation to me!  So I dumped a load of my fresh, unsweetened apple sauce into the slow cooker, left it for 9 hours, and voila!  Apple butter!  We've gone through a few jars in the past week.  If you’ve never tried this method I would highly recommend it!  I have another batch on as I type and it’s slowly bubbling away giving off amazing aroma of cinnamon, allspice, and cloves.

My favourite time of year is autumn.  I love it.  Like most people it’s also the busiest time.  With homeschooling getting back into full swing, apple and pumpkin picking, corn mazes, and a LOT of canning!  So far I’ve canned 1 bushel of McIntosh apples (both sauce and butter).  I’ve never done apple butter before but I’m in love with it.  I only have two more bushels of apples to go (oy!).  Any other MUST try ideas for canning apples??  I’m all ears!!!!
